Recipe: Grilled Caribbean-style chicken


Ingredients:

  • 1/4 cup fresh squeezed orange juice
  • 1 teaspoon orange peel
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon ginger
  • 2 garlic cloves, minced
  • 1/4 teaspoon hot pepper sauce
  • 1/2 teaspoon fresh oregano, minced
  • 11/2 pounds boneless, skinless chicken breasts, halved


Procedure:

  1. In a blender, combine all ingredients except the chicken.
  2. Pour the marinade over the chicken and marinate in the refrigerator at least 2 hours or up to 48 hours.
  3. Grill or broil the chicken for about 6 minutes per side until no trace of pink remains.
