Classic sugar cookie

Ingredients:
1/2 cup butter
1 cup Equal Sugar Lite
1 medium egg
1 teaspoon vanilla
1 1/3 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 package sugar-free fruit-flavored gelatin

Preparation:

  1. Preheat oven 350°F.
  2. Using the medium speed of your mixer, beat butter and Equal in medium-sized bowl until well combined.
  3. Mix in egg and vanilla until blended.
  4. Combine flour, baking powder, and salt, and add to other ingredients. Mix until blended.
  5. Drop dough by rounded teaspoons onto cookie sheets coated with non-stick cooking spray. Flatten slightly using a spoon.
  6. Sprinkle with sugar-free fruit-flavored gelatin.
  7. Bake for 10–12 minutes.
  8. Remove from cookie sheet and cool completely on wire rack.
  9. Store in a tightly covered container at room temperature.

For rolled sugar cookies: Wrap dough in plastic wrap and refrigerate several hours or overnight. Work with half of the dough, and keep remaining dough refrigerated. Roll dough on lightly floured surface to ¼ inch thickness. Cut with desired cookie cutters. Sprinkle with sugar-free gelatin. Bake in 350°F oven 8–10 minutes. Follow steps 8 and 9 above.

Yields 21 (2 cookie) servings.
